Sweet potato pancakes

Happy Friday, I’ve been trying to blog all day! My charger isn’t working for my computer so here I am blogging from my phone! Today I wanted to give you a tasty recipe that you could possibly try this weekend! I have to say, it’s soooo yummy! It’s my sweet potato pancakes! This is probably one of my favorite pancake makeovers I’ve ever made! So here it is…

What you’ll need!

Note: recipe should make about 6 pancakes
1 cup of bisquick
1/2 cup of milk
1 egg
1 cooked unpeeled sweet potato
1 teaspoon of vanilla
1 teaspoon of cinnamon
1 tablespoon of pecans halves for garnish

Adding the sweet potato last, mix the other ingredients together. Make sure the sweet potato is cooked at a creamy consistency, then add it to the mixture slowly. Get your skillet hot and ready. (I like to use a little less than a tablespoon of butter). Pour about 1/4 cupfuls of the pancake batter into the skillet. Cook until each side is golden brown!

Now, add some syrup, sprinkle a little cinnamon and the pecan halves for taste! I hope you try these yummy pancakes! They are a sure way to make your belly smile:)

Very berry strawberry mimosa

Good evening my loves. Today I wanted to share a tasty drink that will go great with your breakfast. It’s a very berry strawberry mimosa. I love mimosa’s with pretty much any savory breakfast choice. This mimosa will leave you wanting mimosa’s every morning!!!

 What you’ll need!

1 bottle of Strawberry Arbor Mist

1 carton of Strawberry Passion Minute Maid or Minute Maid Berry Punch

Frozen Strawberries (as many or as few as you’d like)

I like to use a small mason jar from time to time, it gives a country feel! You can use your favorite champagne glass. Fill your glass or jar half way full with the Strawberry Passion Minute Maid or the Minute Maid Berry Punch (which ever you prefer, they are both extremely tasty). Fill the remainder of the glass or jar with the Strawberry Arbor Mist. Use as many frozen strawberries as you’d like to top the drink with (I used quit a few so when the drink is finished I can use a spoon to scoop the soaked strawberries up and eat)! You can use fresh, I prefer frozen. Lastly, I garnished the top of the jar with red sugar for a little razzle dazzle!!!

I can’t wait until you try this tasty treat!!! I hope you have a blessed weekend!

Kale Spaghetti

Hey my spunky S.D.C. buddies, today I’m going to give you that kale spaghetti recipe I talked about in the tale on kale post in the health section. I am so eager to give you this recipe. It is extremely healthy and hardy. I used all organic ingredients and boy was this one of the best spaghetti recipes I’ve ever made.

What you’ll need!

(you can alter this recipe according to your family size, this recipe serves around 6)

1/2 cup of organic diced onion

1 diced organic yellow pepper

1 diced organic red pepper

8 oz of organic mushrooms

1 box or bundle of organic kale

1 box of Morning Star meatballs or 1 pound of ground turkey (your preference)

1 box of organic spaghetti noodles

1 jar of organic spaghetti sauce

2 tablespoons of organic olive oil

your preferred seasonings!

Step 1

Pour a tablespoon of the olive oil in a wok with the stove being on medium heat, let the oil begin to sizzle. Combine the diced onions, yellow peppers, red peppers and mushrooms.

Step 2

When you begin to notice your veggies are almost cooked add the kale. Cook until all the veggies are tender.

Step 3

Cook your pasta, this usually takes 8-10 minutes. It’s always a great idea to add your noodles after the water has begun to boil! Cook until tender, drain and put to the side.

Step 4

Add the jar of sauce and your preferred seasonings to the veggies. I say prefered seasonings because everyone’s seasoning choices may be different. I use a few spices, (Lawry’s Seasoned Salt, Trader Joe 21 Seasoning Salute & Tony’s Chachere’s Original Creole Seasoning) to name a few.

Step 5

I’m a vegetarian and my husband isn’t so it’s completely up to you whether you want to use veggie meatballs or ground turkey. I use a little less than a tablespoon of olive oil to cook the veggie meatballs (cook until brown). The ground turkey has enough oil as is, you can season your ground turkey to your liking or you can let your ground turkey be seasoned by the sauce and veggies. I added a little extra spice (creole seasoning) for some added heat.

Step 6

I like to place my pasta on the plate then sauce over it. Some people like to mix the ingredients. It’s totally up to you. I love texas toast…but since this is a healthy meal I had multi-grain bread with I Can’t Believe It’s Not Butter.

Now, Twirl that lovely kale spaghetti on a fork and devour!!!!

I hope you try this, because I absolutely enjoyed it, it was soooooo delich!!!!!

Crunch Berry French Toast!

Hey love bugs!!! Can you remember a time when you were little and you couldn’t wait for Saturday to roll around so you could wake up and make your favorite bowl of cereal sit in front of the TV to watch your favorite cartoons? Well this ones for all the kiddies at heart. My mother is the inspiration for this, except she loves the original Captain Crunch… she can eat two bowls at a time! Myself on the other hand loved the berries in Crunch Berries, so how about this…french toast with a little twist!!!

These were the most cereal satisfying little babies a cereal addict could ask for!

NOTE: This will make 8 slices divide everything in half for 4.

2 eggs

1 cup of heavy whipping cream

1 teaspoon of vanilla extract

2 cups of Crunch Berry cereal

8 slices of thick bread (preferably a sweet bread like Hawaiian)

powdered sugar

1 strawberry

syrup (optional)

Place eggs, heavy whipping cream and vanilla extract in a bowl, whisking until ingredients are combined. Place a plate on top of two paper towels (this step is a little messy!) Pour the 2 cups of Crunch Berries on the plate, crunching them with a spoon. Pour the crunched Crunch Berries in mixture (mixing slightly.) Get your skillet ready by placing a tablespoon of butter in the pan turning your stove on medium heat. After the butter begins to sizzle place your slice of bread in the mixture coating each side, then place the coated bread in the skillet. Flip the bread over when the first side is brown, after the second side browns place on a plate. Continue this step until each slice is done. Stack the amount of slices you want on a plate. As garnish slice a strawberry in three, place over your stack and sprinkle the powered sugar! Drizzle your favorite syrup over (which is optional, these are pretty tasty as is!)

Hope you have a berry good Saturday!!!
Love ya, Muah!
