Easy veggie chicken & broccoli fettuccine

Happy day beautiful people!! It’s fettuccine Friday here at my house!!! Today, I wanted to share my veggie chicken and broccoli fettuccine. For the meat lovers you can substitute the veggie chicken with chicken breast or chicken strips! So let’s gets started!!

What you’ll need! (Recipe feeds about 6)
1 bag of gardein lightly seasoned chick’n scallopini
1 box of fettuccine
2 jars of Alfredo sauce (I like Bertolli)
1 bag of frozen broccoli

Step one
Cook your fettuccine, drain it and put aside.

Step two
Sauté your broccoli in a little olive oil.

Step three
In another pan spray Pam or oil your pan with olive oil; season your gardein chick’n and cook until both sides are cooked evenly. Put the cooked chick’n aside.

Step four
Pour the two jars of Alfredo over the sautéed broccoli. Season the Alfredo and broccoli; stir and cook until heated.

Step 5
Slice your chick’n into strips,

Step 6
Depending on how many people you are serving plate the fettuccine. Place about 6 chick’n strips over each serving of fettuccine. Some people like their fettuccine saucy, some don’t! It’s up to you how much of your Alfredo and broccoli sauce you want poured over your noodles. Pour as much as you like!

There it is, a easy meal that saves time and hunger! I like to have my fettuccine with cheesy garlic bread!

Chicken, egg and cheese, biscuit w/peach jelly!!!

Good morning beauties! I remember when I use to eat meat, I use to love this chicken and biscuit sandwich from McDonalds…then they stopped selling it! Although I don’t eat chicken anymore I was inspired yesterday to make my own after going to Dunkin Donuts to get coffee; I noticed they have a little chicken biscuit sandwich of their own! Of course I had to add my own touches! I wanted to share the recipe, especially after yesterday with the whole secret macaroni situation!!!! I had to make up for that!! Here’s how to make it!!!

What you’ll need!!!

1 chicken breast
2 slices of sharp cheddar cheese
2 biscuits (the Pillsbury brand preferably)
2 eggs
Peach jelly

Step 1
Preheat your oven on 350.

Step 2
Season your chicken breast and flour it. Get your skillet hot with olive oil or what ever oil you like to use when cooking. When the skillet is hot, place your seasoned, floured, chicken breast in the skillet.

Step 3
Your oven should be pre-heated. Place your biscuits in the oven and cook for around 12-15 minutes.

Step 4
Check your chicken to see if it is cooked. When chicken is cooked place aside.

Step 5
In another skillet, place about 1/2 tablespoon of butter and let simmer. Crack your first egg and and let it cook, when the first side is finished flip over and add your sharp cheddar cheese let it melt slightly. Take the first egg out and place aside, cook the second egg using the same steps as the first.

Step 6
By now your biscuits should be done, or cooling…depending on how long everything else took to cook! Cut your biscuits open and slather jelly on each side.

Step 7
If you want a thick biscuit cut your chicken half way across, if not (like I did, cut down the chicken, making the chicken flat.) So there is good room for the fried egg and cheese. Place your cut chicken on the bottom of the biscuit.

Step 8
Now place your fried egg and cheese over the cut chicken breast. Top the sandwich with the other half of the biscuit.

Finally…take a bite out of this little delicious wonder!!!!

Top Secret Mac and Cheese!

Good evening!!! How many of you are able to keep a secret? How many of you are loyal, and if someone told you something and told you to never tell a soul, could you hold that in? Well, tonight, I thought it would be cute to show and not tell the secret recipe of my mother’s macaroni and cheese! I vowed to my mother I would never tell! This macaroni is the best macaroni I’ve ever tasted, and I promise if I could I would give you the recipe! Let’s start a little discussion on secret recipes that you guys know! You don’t have to give the actual recipe but maybe you can tell me who the recipe is from and what it is!!! You can even share pics if you like!!! The point of this post, is to share with you that loyalty is everything! If you have someone in your life that exposes something special, meaningful, personal, and confidential to you, that means that person values and trusts you beyond your own understanding! Don’t mess that up! Trust is such a magnificent thing!!! Confidentiality is everything! Be a good confidant!

Stuffed peppers with beans, rice & cheese

Hey y’all! Today I wanted to share these oh so yummy in my tummy stuffed peppers! You can do them
any way you like. They are healthy, hardy, tasty and festive!

What you’ll need!

Stop light red peppers (red, green, and yellow)

1 cup of white rice

3 cups of black beans

1 1/2 of shredded mozzarella

Pam cooking spray

Step 1

Cook your cup of white rice. Drain and put aside!

Step 2

Pre-heat your oven to 350. Sauté and season your 3 cups of black beans. Put aside.

Step 3

Cut the tops off your peppers and clean them. Pat them dry with a paper towel.

Step 4

Mix your rice and beans together. Stuff each cleaned pepper until it can’t be stuffed!! I like my peppers full!

Step 5

Use the 1 1/2 of shredded mozzarella to top the rice and beans in the pepper. I love cheese:) you can alter the recipe by taking a little away or adding! I use all the cheese I can!

Step 6

In a baking pan slightly spray with Pam. Place your stuffed peppers and tops (if you like) in the oven and cook for 40-45 minutes.

Step 7

Take those beautiful babies out the oven and let them cool. Finally take a scoop full of the stuffed pepper and taste!

Hawaiian Martini

Hey happy Friday…just wanted to share a beautiful, delightful drink and fish tacos I had yesterday from Bonefish Grill. The drink was great, the fish tacos were ok… The drink is called the Hawaiian martini and it is only for a limited time. It’s one of the best martinis I’ve had. My Aunt was the one who originally told me it was great, ironically my husband ordered it… Me not realizing until it came to the table remembered it was the pretty drink my aunt talked about! Maybe you can try it when you go!

Eating right

Hey my loves! Tonight I wanted share a little quick meal I threw together. Salmon and salad. It’s very healthy and it’s everything I need on one plate to get my nutrients for the day! It’s great when u eat right! As my mother taught me, eat right, think right! This is soooo true! I notice a huge difference in my thinking process when I eat properly! Take care of yourselves, by taking time to cook for yourselves! Love yourselves! So you can love others!!!

Steak, tomato, mozzarella, and avocado omelette

Good afternoon! Today I want to share my steak, tomato, mozzarella, and avocado omelette. I think it’s a great breakfast meal for the steak lover’s! If you want to leave out the steak that’s fine too! This was made for my husband, and it was a hit!

Step one
Slice about 1/4 of a cup of steak and season to your liking. Cook thoroughly.

Step two
Dice about 1/4 of a cup of tomatoes and heat In the same skillet as the steak. It should only take a few seconds to just heat the diced tomatoes slightly.
Step three
Dice about 1/4 of a cup of avocados and follow step two…just heat the avocados slightly in the skillet with the steak and tomatoes.

Step four
Scramble two eggs, season with a little salt and pepper. Heat your omelette skillet with about 1/2 tablespoon of butter. When your skillet is heated pour the scrambled eggs in, making sure the eggs hit every edge forming the the circular shape of the skillet. When the eggs begin to bubble check to see if it is almost time to flip. If it is, pour your steak, tomatoes and 1/4 of mozzarella on the opposite side of the side you are going to flip. Flip when your eggs are cooked, and cook a little longer to make sure your mozzarella has melted.

Step five
When your omelette is cooked plate it. For garnish slice a few avocados and tomatoes and top of your finished omelette.

Hey, now it’s time to take a bite!!!

Creamy chicken and rice soup

Happy Friday!!! Believe it or not I’m sick:( so i felt there was no better time to share my homemade creamy, chicken and rice soup recipe. It’s hardy, its soothing and just down right delicious. I love this recipe because you can alter or add as you go. It’s up to you what veggies and base you’ll use, but I’ll give you a quick, easy way to make this soup when you or someone you care about is feeling blue.

What you’ll need! (I altered the soup for myself, no chicken and I used veggie stock and cream of celery! This can also be creamy vegetable soup for vegetarians!)

3 cups chopped chicken

1 1/2 cups rice

1 cup chopped carrots

1 cup chopped celery

2 cups water

2 cans chicken stock or vegetable stock

2 cans of cream of chicken or celery

4 cups of milk

                          Directions
  1. Season and cook chicken. 
  2. Cook and drain rice. 
  3. Boil your water, chicken stock or vegetable stock, and milk in a large pot. 
  4. Add the diced vegetables, stirring slowly.
  5. Let the veggies cook until tender. Stirring with your soup spoon periodically until cooked.
  6. Add the cooked rice and cooked chicken to the broth and veggies. Stir in.
  7. Add the two cans of cream of celery.
  8. Stir all the ingredients until it has a creamy, soup consistency.
  9. Season to your liking.

Pop Rocks and sour gummy worms cupcakes!!

Happy Tuesday beautiful people!! As some of you know I am a kid at heart! That’s why I was so excited when God blessed me with my baby girl. I can re-live childhood favorites with her. Today, I was inspired by an all time favorite, Pop Rocks and sour gummy worms. I wondered how I could take those two fun candies and incorporate them someway, somehow into some cupcakes. It’s awfully simple. I just bought a confetti cake mix and cotton candy frosting, topped the cupcakes with the Pop Rocks and sour gummy worms. Now, if you aren’t a sweet lover these aren’t for you!!! They are extremely sweet!!! They will definitely give a fun sugar rush. So, all you have to do is follow the basic cake box recipe for cupcakes and frost them. You can even get a little creative and change the cake mix and frosting to your preference.

Hey Cutie Patooties, today I wanted to share my pink peanut candied apples. They are great, they remind you of the circus. If you have a sweet tooth this is a sure way to fix your craving. If you are a fan of the caramel apples and love fun and festive treats, you’ll love this. I am taking custom orders now! I have a variety of apples to choose from, I will share other pictures soon. B.T.W., you can also make up your own apple and I can make it. If you want a peanut butter apple with Reese’s pieces it can be done! A caramel apple with snicker bites it can be done.
